Tender marinated chicken skewers grilled to perfection, served with warm pita and tzatziki.

  • 1 lb chicken breast, cut into cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Pita bread, for serving
  • Tzatziki sauce, for serving
  • Vegetables for grilling (optional, e.g. bell peppers, onions)

Instructions

  1. Marinate the Chicken: In a bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Toss in the chicken cubes, ensuring they are well-coated in the marinade. Allow the chicken to marinate for at least 30 minutes, but if you can let it sit longer (up to 4 hours), the flavors will deepen!
  2. Preheat the Grill: Preheat your grill to medium-high heat, prepping it for a glorious sizzle. If you’re using wooden skewers, don’t forget to soak them in water for about 30 minutes beforehand to prevent burning!
  3. Thread the Chicken: Carefully thread the marinated chicken cubes onto the skewers. If you’re feeling adventurous, you can alternate them with pieces of bell peppers and onions for extra sweetness and color!
  4. Grill the Chicken: Place the chicken skewers on the grill and let them cook for about 10-15 minutes, turning them occasionally. You’ll know they’re done when they’re golden brown and the internal temperature reaches 165°F. Those grill marks will add rustic charm to your dish!
  5. Serve and Enjoy: Once grilled, remove the skewers from the grill and serve with warm pita bread and a generous side of tzatziki sauce. Feel free to throw on those grilled vegetables on the side for a colorful, hearty feast!

Notes
