A delightful bowl of grilled chicken, fresh vegetables, and creamy feta that embodies the warmth of Mediterranean meals.

  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup kalamata olives, pitted
  • Tzatziki sauce (for serving)

Instructions

  1. Sauté the chicken: In a skillet, heat olive oil over medium heat. Add the diced chicken breast along with garlic powder, oregano, salt, and pepper. Cook until the chicken is cooked through and golden brown, about 8-10 minutes.
  2. Combine the fresh ingredients: While the chicken is sizzling, grab a large mixing bowl and combine the cooked rice or quinoa with diced cucumber, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and kalamata olives.
  3. Mix it all together: Once the chicken is beautifully golden and fragrant, transfer it to the large bowl with the vegetables and grains. Gently mix all the ingredients together until well combined.
  4. Serve it up: Plate the Greek Chicken Bowls and top them generously with tzatziki sauce, or place it on the side for dipping.

Notes

Make sure to not overcrowd the skillet when sautéing the chicken to achieve proper browning.
