A vibrant bowl featuring juicy marinated chicken, fresh vegetables, and creamy tzatziki sauce, perfect for quick weeknight meals or gatherings.

Ingredients

  • 4 Chicken breasts
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 3 tbsp Lemon juice
  • 2 tsp Dried oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 Cucumber, diced
  • 2 Tomatoes, chopped
  • 1 Red onion, sliced
  • 1 cup Feta cheese, crumbled
  • 1/2 cup Kalamata olives
  • 2 cups Cooked rice or quinoa
  • 1 cup Tzatziki sauce

Instructions

  1. Marinate the chicken breasts in olive oil, minced garlic, lemon juice, oregano, salt, and black pepper for at least 30 minutes.
  2. Cook the marinated chicken in a skillet until fully cooked, about 6-7 minutes on each side.
  3. Prepare the veggies: dice the cucumber, chop the tomatoes, and slice the red onion.
  4. Slice the chicken into strips once it’s cooked and has rested for a few minutes.
  5. Assemble the bowls with a base of cooked rice or quinoa, layered with sliced chicken, diced vegetables, feta cheese, and Kalamata olives.
  6. Drizzle tzatziki sauce over the top and serve.

Notes

For an extra flavor boost, marinate the chicken longer. Serve with pita bread or Greek salad for a complete meal.
