A vibrant and creamy dessert combining mint and chocolate flavors, perfect for summer gatherings.

Ingredients

  • 1 cup crushed chocolate cookies
  • 1/4 cup butter, melted
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1/2 cup crème de menthe (green)
  • 1/2 cup crème de cacao (white)
  • 1 teaspoon vanilla extract
  • 1 envelope gelatin
  • 4 tablespoons cold water

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix the crushed chocolate cookies and melted butter together until combined. Press this mixture into a pie pan to form the crust. Bake for 10 minutes and allow it to cool completely.
  2. Whip the heavy cream in a large bowl until soft peaks form. Gradually add the powdered sugar, continuing to beat until stiff peaks are achieved.
  3. Combine the crème de menthe, crème de cacao, and vanilla extract in a separate bowl. In a small saucepan, sprinkle the gelatin over the cold water and let sit for about a minute. Heat gently until dissolved, then add to the chocolate mixture.
  4. Fold the mint and chocolate mixture into the whipped cream until well combined, maintaining the light and airy texture.
  5. Pour the filling into the cooled crust, smoothing the top. Refrigerate for at least 4 hours, or until set. Serve chilled.

Notes

Serve with fresh fruit salad or a chilled glass of white wine. Can be made a day in advance for better flavor.
