A delightful dessert that melds creamy cheesecake with the festive flavors of gingerbread, served in elegant layers.

Ingredients

  • 16 oz softened cream cheese
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • a pinch of ground cinnamon
  • a pinch of ground nutmeg
  • 1 cup heavy whipping cream, whipped to soft peaks
  • 2½ cups crushed gingerbread cookies or gingersnaps
  • Molasses drizzle or ground cinnamon for topping (optional)

Instructions

  1. Soften the cream cheese by leaving it at room temperature until fully softened.
  2. Whip the heavy cream in a chilled bowl until it forms soft peaks.
  3. Mix the softened cream cheese with granulated sugar and vanilla extract until smooth. Add ground cinnamon and nutmeg.
  4. Fold the whipped cream gently into the cream cheese mixture.
  5. Prepare the gingerbread cookies by breaking them into coarse chunks.
  6. Assemble the parfaits by layering cookies and cheesecake mixture in clear glasses.
  7. Chill the parfaits in the refrigerator for at least 2 hours.
  8. Add molasses drizzle or cinnamon topping before serving, if desired.

Notes

These parfaits can be stored in the refrigerator for up to 3 days. Make sure to cover tightly.
