Ingredients

  • 4 chicken breasts
  • 2 cups potatoes, diced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine diced potatoes, olive oil, minced garlic, salt, pepper, and Italian seasoning in a large bowl.
  3. Spread the potato mixture evenly in a single layer on a baking sheet.
  4. Season the chicken breasts with salt, pepper, and half of the grated Parmesan cheese.
  5. Place the seasoned chicken on top of the potatoes and sprinkle with the remaining Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
