Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 cups spinach (optional)
  • Croutons for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Brown the chicken until cooked.
  3. Stir in garlic and onion, cooking until the onion is translucent.
  4. Pour in the chicken broth and bring to a simmer.
  5. Reduce heat and add heavy cream and Parmesan cheese, stirring until well combined.
  6. Season with salt and pepper, and add spinach if using.
  7. Simmer for a few minutes until heated through.
  8. Serve warm, garnished with croutons if desired.

Notes

For richer flavor, roast garlic and onion before adding chicken. Adjust thickness by changing broth or cream amounts.
