A simple yet impressive Garlic Herb Roasted Chicken that delivers juicy, flavorful results.

Ingredients

  • 1 whole chicken
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, halved

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix together the minced garlic, rosemary, thyme, olive oil, salt, and pepper.
  3. Pat the chicken dry with paper towels, then rub the garlic herb mixture all over the chicken.
  4. Stuff the cavity of the chicken with lemon halves.
  5. Place the chicken in a roasting pan and slide it into your preheated oven.
  6. Roast for about 1 hour, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.

Notes

Pair with a light green salad or garlic mashed potatoes. Leftover chicken can be stored in the refrigerator for up to 3 days.
