  • 1 cup bell peppers, thinly sliced (red, yellow, and green)
  • 1 cup cucumber, julienned
  • 1 cup carrots, grated
  • 1 cup spinach leaves
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Cream Cheese Spread: In a medium bowl, combine the softened cream cheese, sour cream, dill, and lemon juice. Mix until smooth and well combined.
  2. Layer the Tortilla: Lay a tortilla flat on a clean surface and spread a generous layer of the cream cheese mixture over the entire surface.
  3. Add the Vegetables: Evenly distribute the sliced bell peppers, cucumber, grated carrots, and spinach leaves over the cream cheese layer.
  4. Roll It Up: Starting from one end, carefully roll the tortilla tightly to enclose the filling.
  5. Repeat the Process: Repeat the process with the remaining tortillas and filling.
  6. Chill the Rolls: Once rolled, wrap each tortilla in plastic wrap and refrigerate for at least 30 minutes to firm up.
  7. Slice and Serve: After chilling, remove the plastic wrap and slice each roll into 1-inch pieces. Serve immediately or store for later!
