Satisfying breakfast burritos filled with eggs, veggies, and cheese can be made in advance and frozen for busy mornings.

Ingredients

  • 6 large eggs
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked and crumbled sausage or bacon
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • 6 large tortillas
  • Salsa (optional)

Instructions

  1. Whisk together the eggs, salt, and pepper until well combined.
  2. Sauté the onions and bell peppers until softened, about 5 minutes.
  3. Add the cooked sausage or bacon to the skillet and mix well.
  4. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are fully cooked.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Spoon an equal amount of the egg mixture onto each tortilla and roll them up tightly.
  7. Wrap each burrito in foil or plastic wrap and place them in a freezer bag.
  8. Reheat by removing the wrapping, wrapping in a damp paper towel, and microwaving for 1-2 minutes.

Notes

For best flavor, keep these burritos in an airtight bag in the freezer.
