Delightful mini pancakes filled with melted chocolate chips, perfect for breakfast or as a sweet snack.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup chocolate chips

Instructions

  1. Whisk the dry ingredients in a bowl: flour, sugar, baking powder, baking soda, and salt.
  2. Mix the wet ingredients in another bowl: buttermilk, egg, and melted butter.
  3. Combine the wet and dry ingredients until just moistened; a few lumps are okay.
  4. Preheat a non-stick skillet over medium heat.
  5. Pour small amounts of batter (about 1 tablespoon) onto the skillet.
  6. Add a few chocolate chips into the center of each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Serve warm and enjoy!
