Delightful mini pancakes infused with rich melted chocolate, perfect for breakfast, brunch, or dessert.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup chocolate chips

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. Combine the buttermilk, egg, and melted butter in another bowl.
  3. Pour the wet ingredients into the dry ingredients, mixing until just combined.
  4. Heat a non-stick skillet over medium heat until hot enough for water to sizzle.
  5. Pour about a tablespoon of batter onto the skillet for each pancake.
  6. Add a few chocolate chips to the center of each pancake before they bubble.
  7. Cook until golden brown on both sides and the chocolate is melted, about 1-2 minutes per side.
  8. Serve warm with your favorite toppings.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in microwave or air fryer.
