Flavorful and visually stunning flank steak pinwheels filled with spinach, sun-dried tomatoes, and feta cheese.

Ingredients

  • 1 pound flank steak
  • 1 cup spinach (cooked or fresh)
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup feta cheese
  • 1 clove garlic (minced)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Flatten the flank steak on a cutting board and pound it to an even thickness.
  3. Mix the spinach, sun-dried tomatoes, feta cheese, garlic, salt, and pepper in a bowl.
  4. Spread the mixture evenly over the flank steak.
  5. Roll the flank steak tightly into a log and secure with kitchen twine or toothpicks.
  6. Sear the rolled steak on all sides in a skillet with olive oil over medium-high heat.
  7. Transfer the pinwheel to the oven and bake for 20-25 minutes to desired doneness.
  8. Let the pinwheels rest for 5 minutes before slicing.
  9. Serve warm.

Notes

Pair with arugula salad, roasted vegetables, or garlic mashed potatoes. Store leftovers in an airtight container for up to 3 days.
