A simple yet indulgent dessert featuring a buttery crust topped with sweet-tart raspberry jam.

  • 1 cup unsalted butter (softened)
  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 egg (room temperature)
  • 1 jar seedless raspberry jam (912 ounces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the softened butter, flour, sugar, and egg using an electric mixer until crumbly.
  3. Set aside 1 1/2 cups of the mixture for the topping.
  4. Press the remaining mixture into a greased 13 x 9 inch baking dish.
  5. Spread the raspberry jam evenly over the crust.
  6. Crumble the reserved topping over the jam layer and press lightly.
  7. Bake for 30-40 minutes until the top is golden brown.
  8. Allow to cool completely before cutting into squares.

Notes

Serve with whipped cream or ice cream for an extra treat.
