A delightful layered popsicle featuring cherry, lemonade, and a coconut-blue raspberry fusion that’s perfect for hot summer days.

Ingredients

  • 1 cup cherry juice
  • 1 cup lemonade
  • 1 cup blue raspberry juice
  • 1 cup coconut milk
  • Sweetener to taste (optional)
  • Popsicle molds
  • Popsicle sticks

Instructions

  1. Prepare the Cherry Layer: In a bowl, mix the cherry juice with sweetener, if desired. Pour the cherry juice into the popsicle molds, filling them one-third of the way. Insert sticks and freeze for about 120 minutes until firm.
  2. Add the Lemonade Layer: In another bowl, mix the lemonade with sweetener, if preferred. Carefully pour it on top of the frozen cherry layer, filling the mold another third of the way. Freeze for another 120 minutes until set.
  3. Create the Coconut-Blue Raspberry Layer: Combine the blue raspberry juice with coconut milk in a separate bowl and mix well. Pour this vibrant mixture on top, filling the molds to the brim. Insert sticks and freeze until completely solid, about 240-360 minutes or overnight.
  4. Enjoy Your Popsicles: When you’re ready to dig in, simply run the popsicle molds under warm water for a few seconds to loosen them. Gently pull the popsicles out and enjoy the luscious layers!

Notes

Make sure each layer is frozen solid before adding the next for clean, defined layers. Use organic juices for a pure and fresh flavor.
