A comforting and creamy casserole inspired by everything bagels, perfect for brunch or family breakfast.

Ingredients

  • 6 everything bagels, cubed
  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Everything bagel seasoning (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Whisk together the eggs, milk, softened cream cheese, salt, and pepper in a large bowl until well combined.
  3. Add the cubed everything bagels to the egg mixture and let them soak for a few minutes.
  4. Stir in the shredded cheese and chopped green onions.
  5. Pour the mixture into the greased baking dish and sprinkle with everything bagel seasoning.
  6. Bake for 35-40 minutes, until the center is set and the top is golden brown.
  7. Allow to cool slightly before serving.

Notes

For a creamier casserole, use whole milk instead of skim. Feel free to swap in your favorite cheese or make it vegetarian by adding sautéed veggies.
