A deconstructed version of classic Chinese egg rolls, packed with flavors in a healthy and quick-cooking style.

Ingredients

  • 1 lb ground pork or chicken
  • 1 cup coleslaw mix
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Brown the meat, sautéing until browned for about 4-5 minutes.
  3. Add the minced garlic and ginger, cooking for an additional minute.
  4. Toss in the coleslaw mix and soy sauce, stirring until the cabbage is wilted.
  5. Season with salt and pepper to taste.
  6. Garnish with sliced green onions and serve warm.

Notes

Consider serving with steamed rice or in lettuce cups. Store leftovers in an airtight container for up to 3 days.
