Delicious roasted red potatoes with garlic and herbs, perfect as a side dish for any meal.

Ingredients

  • 2 pounds Red potatoes
  • 3 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh herbs (rosemary or thyme)
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the red potatoes into bite-sized pieces.
  3. Combine the potatoes with olive oil, minced garlic, chopped herbs, salt, and pepper in a bowl.
  4. Arrange the potatoes in a single layer on a baking sheet.
  5. Roast in the oven for 25-30 minutes or until golden brown and crispy, turning halfway through.
  6. Serve hot as a breakfast side or dinner favorite.
