Delightful lemon cookies with a sweet, buttery crunch and a tangy citrus flavor.

  • 1 1/2 cups granulated sugar
  • 3 Tbsp lemon zest
  • 2 Tbsp fresh lemon juice
  • 1 large egg
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sugar (for rolling cookies)

Instructions

  1. Beat the butter and sugar: In a mixing bowl, beat the room temperature butter, granulated sugar, and lemon zest with an electric mixer for 1-2 minutes until light and fluffy.
  2. Add in the lemon juice and egg: Mix until all ingredients are beautifully combined.
  3. Combine dry ingredients: Gradually mix in the flour, baking soda, and salt by hand until just combined.
  4. Chill the dough: Cover the bowl and refrigerate for 30-60 minutes.
  5. Preheat the oven: Set to 350°F and prepare 1/4 cup sugar for rolling.
  6. Form the cookies: Use a scoop to form balls, rolling each in sugar.
  7. Bake the cookies: Place on a baking sheet and bake for 11-13 minutes until edges are golden.
  8. Cool the cookies: Let cool on the sheet for 5 minutes before transferring to a cooling rack.

Notes

For enhanced flavor, use fresh lemon juice and don’t skip the refrigeration step.
