3 Tbsp lemon zest
2 Tbsp fresh lemon juice
1 large egg
3 cups all-purpose flour
1 tsp baking soda

Instructions
Beat the butter and sugar: In a mixing bowl, beat the room temperature butter, granulated sugar, and lemon zest with an electric mixer for 1-2 minutes until light and fluffy.
Add in the lemon juice and egg: Mix until all ingredients are beautifully combined.
Combine dry ingredients: Gradually mix in the flour, baking soda, and salt by hand until just combined.
Chill the dough: Cover the bowl and refrigerate for 30-60 minutes.
Preheat the oven: Set to 350°F and prepare 1/4 cup sugar for rolling.
