A comforting and nostalgic dessert perfect for autumn, featuring tender apples and a lightly spiced cake.

  • 2 medium apples, peeled, cored, and chopped (approximately 2 cups)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Powdered sugar, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or cooking spray and place a circle of parchment paper at the bottom.
  3. Toss the chopped apples with 1/4 cup of the sugar and allow them to sit.
  4. Whisk together the melted butter, remaining sugar, eggs, and vanilla extract until smooth.
  5. Sift together the flour, baking powder, salt, cinnamon, and nutmeg.
  6. Incorporate the dry ingredients into the wet mixture, stirring gently until just blended.
  7. Fold in the apple mixture along with any juices that have formed.
  8. Transfer the batter into the prepared cake pan, smoothing the top.
  9. Bake for 40-45 minutes, or until golden brown and a toothpick comes out clean.
  10. Let the cake cool in the pan for about 10 minutes before moving to a wire rack.
  11. Sprinkle with powdered sugar before serving, if desired.
