  • 1 cup fresh cranberries, rinsed
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons honey or brown sugar
  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

Instructions

  1. Heat the skillet with olive oil over medium heat until shimmering.
  2. Season the chicken breasts with salt and pepper, and cook until browned, approximately 5-7 minutes per side.
  3. Remove the chicken from the skillet and set aside to rest.
  4. Add minced garlic to the skillet and sauté until fragrant, about 1 minute.
  5. Combine fresh cranberries, orange juice, orange zest, and honey (or brown sugar); stir to combine.
  6. Bring the mixture to a gentle simmer, allowing cranberries to burst.
  7. Add the chicken back into the skillet, spooning the cranberry sauce over the top, and cook until the chicken is fully cooked through, about 5 minutes.
