Easy Chocolate Birthday Cake

A rich and decadent chocolate cake perfect for birthday celebrations, topped with a glossy ganache.

Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups heavy cream
  • 8 oz dark chocolate (chopped)
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well blended.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until everything is combined and the batter is smooth.
  4. Gradually stir in the boiling water until fully incorporated.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cakes cool, heat the heavy cream until just simmering and then add the chopped dark chocolate and powdered sugar, stirring until smooth.
  8. Remove the cakes from the pans and place one layer on a serving plate. Spread ganache on top and place the second layer on top.
  9. Frost the top and sides of the cake with the remaining ganache.
  10. Decorate as desired and serve!

Notes

Serve with vanilla ice cream or fresh berries. The cake can be stored at room temperature for up to 3 days or in the fridge for about a week. It can also be frozen for longer storage.
