A quick and colorful chicken stir fry packed with vegetables, perfect for a busy weeknight dinner.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pan over medium-high heat.
  2. Add the minced garlic and ginger, stir-fry for about 30 seconds until fragrant.
  3. Cook the sliced chicken breast until no longer pink, about 5-7 minutes.
  4. Add the mixed vegetables and stir-fry for 5-7 minutes until tender and vibrant.
  5. Season with soy sauce, salt, and pepper to taste.
  6. Stir everything together until well combined and heated through.
  7. Serve hot over rice or toss with noodles.

Notes

For added crunch, garnish with sesame seeds or chopped scallions.
