Easy and flavorful Chicken Quesadillas filled with tender chicken, gooey cheese, and vibrant veggies, perfect for busy weeknights.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 flour tortillas
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add diced bell peppers and onions, sauté until softened, about 3-5 minutes.
  3. Combine the shredded chicken, sautéed vegetables, and cheese in a mixing bowl, ensuring everything is evenly mixed.
  4. Place a tortilla in the skillet, adding a portion of the chicken mixture on one side.
  5. Fold the tortilla over and cook until golden brown on each side, about 3-4 minutes.
  6. Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas and filling.
  7. Cut the quesadillas into wedges and serve with sour cream and salsa on the side for a refreshing finish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in a skillet or microwave.
