  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Boil the noodles by bringing a pot of salted water to a boiling point. Carefully add the lo mein noodles and cook according to package instructions until al dente. Drain and set aside.
  2. Heat the sesame oil in a large skillet over medium-high heat. Add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  3. Add the sliced chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until it becomes golden brown and fully cooked through.
  4. Toss in your colorful mixed vegetables, cooking for 3-4 minutes until they become tender but still maintain a delicious crunch.
  5. Pour in the soy sauce and oyster sauce, mixing everything well in the skillet.
  6. Fold in the cooked lo mein noodles gently, ensuring that each strand gets coated in the savory sauce.
  7. Sprinkle in some salt and pepper according to your personal taste preferences.
  8. Spoon the lo mein into bowls and garnish generously with freshly chopped green onions.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of water to regain moisture.
