A comforting bowl of Chicken Fried Rice, perfect for using up leftover veggies and proteins with an explosion of flavors.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add minced garlic and stir-fry for about 30 seconds until fragrant.
  3. Push garlic to the side of the pan. Add the beaten eggs, scrambling until fully cooked.
  4. Add the cooked chicken and mixed vegetables to combine with eggs and garlic.
  5. Add the cooked rice, soy sauce, and green onions, stirring everything together.
  6. Stir-fry everything for about 3-5 minutes until heated through and blended.
  7. Season with salt and pepper to taste, then serve hot and enjoy!

Notes

Use cold, day-old rice for best results. Feel free to customize with different proteins or vegetables.
