A comforting and simple dish featuring tender chicken, fluffy rice, and a zesty tzatziki sauce for a delightful meal.

  • 1 cup cucumber, diced
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 2 cups cooked rice (white or brown)
  • 2 cups cooked chicken, shredded (or rotisserie chicken)

Instructions

  1. Prepare Your Tzatziki Sauce: In a bowl, combine Greek yogurt, diced cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper.
  2. Combine Ingredients: In a separate large bowl, gently fold the cooked chicken and cooked rice together.
  3. Add Tzatziki to the Rice and Chicken: Pour the prepared tzatziki sauce over the mixture and stir to coat evenly.
  4. Transfer to Baking Dish: Preheat the oven to 350°F (175°C), then transfer the combination into a greased baking dish.
  5. Bake Until Heated Through: Place the dish in the oven and bake for about 25 minutes.
  6. Cool, Garnish, and Serve: Let cool for a few minutes and serve warm, garnished with extra dill or cucumber if desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat gently in the microwave or covered in the oven.
