A hearty and flavorful dish perfect for family gatherings, combining ground beef, beans, and fresh vegetables.

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn kernels (fresh or frozen)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your choice)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Sauté the aromatics: In a large skillet over medium heat, add a splash of olive oil. Once hot, toss in the chopped onion and garlic, sautéing until they become fragrant and translucent, about 3-4 minutes.
  2. Brown the beef: Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a spatula, until it’s well-browned and cooked through. Season with salt and pepper.
  3. Add the vegetables: Stir in the diced peppers and continue to cook for an additional 5 minutes until they soften.
  4. Combine the components: Once the beef and vegetables are cooked, add the black beans, diced tomatoes (with juice), and corn. Sprinkle the chili powder and cumin over the mixture, stirring to combine. Let this cook for about 10 minutes on low heat, allowing the flavors to meld together beautifully.
  5. Cheese it up: Sprinkle the shredded cheese over the mixture, covering it evenly. Allow it to melt for an additional 5 minutes on low heat.
  6. Garnish and serve: Once the cheese is melted and bubbly, remove the skillet from the heat. Garnish with fresh cilantro if desired and serve hot.

Notes

This dish can be prepared in advance. For a vegetarian version, substitute ground beef with lentils or quinoa.
