A delightful combination of creamy cheesecake and spiced apples topped with a buttery oat crust, perfect for autumn gatherings.

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 3 cups apples, peeled and sliced
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the graham cracker crumbs with melted butter and press into a springform pan.
  3. Beat the softened cream cheese, sugar, and vanilla until smooth and creamy.
  4. Add the eggs one at a time, mixing well, then pour over the prepared crust.
  5. Mix sliced apples with cinnamon and brown sugar, then spoon over the cheesecake batter.
  6. Combine rolled oats, flour, and remaining sugar, then sprinkle over the apples.
  7. Bake for about 1 hour, until the center is set but slightly jiggly. Cool completely before serving.

Notes

For sweeter apples, use Honeycrisp or Fuji. Let the cheesecake cool for optimal flavor blending.
