1/2 cup powdered sugar
1/2 cup fresh strawberries, diced
1 tsp vanilla extract
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 tsp salt
1/2 tsp baking powder
1/4 cup cold butter, cubed
1/4 cup cold water

Instructions
Prepare the cheesecake filling by combining softened cream cheese, powdered sugar, diced strawberries, and vanilla extract until smooth.
Whisk together dry ingredients in another bowl: mix flour, granulated sugar, salt, and baking powder. Cut in cold butter until it resembles coarse crumbs.
Form the dough by gradually adding cold water and mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
Roll out the dough on a floured surface to about 1/8 inch thick. Use a round cutter to cut out 4-inch circles.
Fill the dough circles with a tablespoon of cheesecake filling in the center.
Seal the pies by folding over the dough to create a half-moon shape and sealing with a fork.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Fry the pies for 2-3 minutes on each side until golden brown.
