  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 8 ounces cream cheese
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until well combined.
  4. Carefully stir in the boiling water until the batter is smooth.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks.
  7. Whip the heavy cream with powdered sugar until stiff peaks form, then fold in the cream cheese until smooth.
  8. Once the cakes have cooled, place one cake layer on a serving plate, spread the filling over it, then place the second layer on top.
  9. Melt the chocolate chips in a microwave-safe bowl, stirring until smooth.
  10. Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  11. Slice and enjoy your decadent chocolate layer cake!
