Crunchy Rice Krispie Ice Cream Bars

Cool and delightful no-bake dessert combining crunchy Rice Krispies, creamy ice cream, and a luscious chocolate coating.

Ingredients

  • 3 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tablespoons butter
  • 2 cups ice cream (any flavor)
  • 1 cup chocolate chips
  • 1 tablespoon vegetable oil (optional)

Instructions

  1. Melt the butter in a large pot over low heat. Add the mini marshmallows and stir until completely melted. Remove from heat.
  2. Add the Rice Krispies cereal to the melted marshmallow mixture and stir until well coated.
  3. Press half of the mixture into a lined 9×13 inch pan to form a base layer, ensuring it’s packed down well.
  4. Spread the ice cream over the top of the Rice Krispies layer, smoothing it out evenly.
  5. Press the remaining Rice Krispies mixture on top of the ice cream layer.
  6. Freeze for at least 2 hours or until firm.
  7. In a microwave-safe bowl, melt the chocolate chips and vegetable oil together until smooth.
  8. Remove the dessert from the freezer and cut it into bars of your desired size.
  9. Dip each bar into the melted chocolate and place them on a parchment-lined tray.
  10. Let the chocolate set in the refrigerator before serving.

Notes

For variations, try different ice cream flavors or mix in crushed cookies or sprinkles.
