Delicious ice cream bars made with crunchy Rice Krispies and a chocolate coating, perfect for summer gatherings.

  • 3 cups Rice Krispies
  • 1 cup mini marshmallows
  • 4 tablespoons butter
  • 2 cups ice cream (any flavor)
  • 1 cup chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Melt the marshmallow mixture: In a saucepan, melt butter and marshmallows over low heat until smooth.
  2. Combine with Rice Krispies: Remove from heat and stir in Rice Krispies until well coated.
  3. Press into the pan: Press the mixture into a lined baking pan evenly.
  4. Ice cream layering: Spread ice cream over the Rice Krispie layer and freeze until firm.
  5. Melt the chocolate: In a microwave-safe bowl, melt chocolate chips with vegetable oil until smooth.
  6. Cut into bars: Cut the dessert into bars and dip each in the melted chocolate.
  7. Allow chocolate to set: Allow the chocolate to set before serving.

Notes

For easier handling, wet your hands when pressing the mixture into the pan. Feel free to add nuts, sprinkles, or fruit jam for variations.
