Ingredients

  • Beef Chuck Roast: 3-4 pounds, trimmed of excess fat
  • French Onion Soup: 2 cans (10.5 oz each)
  • Onions: 2 large, sliced thinly
  • Garlic: 4 cloves, minced
  • Beef Broth: 1 cup
  • Thyme: 1 teaspoon, dried
  • Bay Leaves: 2
  • Salt: 1 teaspoon, to taste
  • Pepper: 1 teaspoon, to taste
  • Olive Oil: 2 tablespoons, for searing

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the beef chuck roast with salt and pepper, making sure to coat it evenly.
  3. Sear the roast in the skillet for 4-5 minutes on each side until it becomes beautifully brown.
  4. Transfer the seared roast to your crock pot, setting it aside for the next steps.
  5. Add the sliced onions and minced garlic into the crock pot, surrounding the roast for maximum flavor.
  6. Sprinkle the thyme over the mixture, add bay leaves, and pour the French onion soup and beef broth over the roast.
  7. Cover the crock pot and cook on low for 8-10 hours or on high for 4-5 hours, until the meat is fork-tender.
  8. Remove the roast and let it rest for 10 minutes before slicing. Discard the bay leaves for enhanced eating enjoyment.
