Delightful Croatian Peach Cookies with a buttery dough and sweet apricot filling, perfect for gatherings.

  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup apricot jam
  • Food coloring (optional, for the peach color)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour and baking powder in a bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  5. Add the flour mixture to the wet ingredients, mixing until fully combined.
  6. Shape the dough into small balls and flatten them slightly.
  7. Place a small dollop of apricot jam in the center of each flattened dough piece and fold over, sealing well.
  8. Bake for 15-20 minutes or until golden brown.
  9. Cool and sprinkle with food coloring if desired.
  10. Dust with powdered sugar before serving.

Notes

Use room-temperature butter for better results. Experiment with different jams and feel free to add nuts or sprinkles for extra crunch.
