A heartwarming dish featuring vibrant pesto pasta paired with crispy, cheesy chicken, perfect for any occasion.

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 8 ounces pasta (such as penne or spaghetti)
  • 1 cup pesto sauce
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the breadcrumbs and grated Parmesan cheese in a bowl.
  3. Season the chicken breasts with salt and pepper.
  4. Coat the chicken with the breadcrumb and cheese mixture.
  5. Heat olive oil in a skillet over medium heat and sauté the chicken for about 5-7 minutes on each side.
  6. Transfer the browned chicken to a baking sheet and bake for about 10 minutes.
  7. Cook the pasta according to package instructions, drain, and return to the pot.
  8. Add the pesto sauce to the drained pasta and toss to coat.
  9. Slice the crispy chicken and serve it on top of the pesto pasta, garnishing with fresh basil if desired.

Notes

For added flavor, mix different cheeses or include sun-dried tomatoes in the pasta.
