  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs with melted butter and sugar until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Beat the softened cream cheese with sugar and vanilla until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the heavy cream until fully incorporated.
  7. Pour the cream cheese mixture over the crust and bake for 60-70 minutes.
  8. Cool at room temperature, then refrigerate for at least 4 hours.
  9. Sprinkle brown sugar over the top and caramelize with a kitchen torch before serving.
