A delicious fusion of cheesecake and crème brûlée, featuring a creamy base and a caramelized topping.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup sugar for topping

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a springform pan.
  2. In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until crumbly.
  3. Press this mixture firmly into the bottom of your prepared springform pan.
  4. Beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and fluffy.
  5. Add the eggs one at a time, mixing thoroughly after each addition.
  6. Stir in the heavy cream until fully combined.
  7. Pour the cream cheese mixture over the prepared crust and smooth the top.
  8. Bake in the preheated oven for about 60-70 minutes, until the center is set but jiggles slightly.
  9. Let the cheesecake cool in the pan, then chill in the fridge for at least 4 hours, preferably overnight.
  10. Slightly sprinkle 1/4 cup sugar over the top and caramelize using a kitchen torch.
  11. Slice your masterpiece into wedges and enjoy!

Notes

Consider using a water bath while baking for a smoother texture. If you don’t have a torch, broil the cheesecake for a minute or two to caramelize the sugar.
