A luxurious dessert with a silky custard and a crisp caramel top, perfect for special occasions.

Ingredients

  • 2 cups heavy cream
  • 1 tablespoon vanilla extract
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 3 tablespoons brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Heat the cream and vanilla extract over medium heat until simmering.
  3. Whisk together the egg yolks and granulated sugar until pale and thickened.
  4. Combine the hot cream mixture into the egg yolks, whisking constantly.
  5. Strain the mixture through a fine sieve into a jug.
  6. Pour the custard into ramekins, filling them three-quarters full.
  7. Set up a water bath with the ramekins in a baking dish, filled with hot water halfway up the sides.
  8. Bake for 30-40 minutes until set but still jiggly.
  9. Cool to room temperature, then refrigerate for at least 2 hours.
  10. Caramelize the sugar topping with a kitchen torch before serving.

Notes

Strain the custard for a silky texture and use a broiler if a kitchen torch is unavailable for caramelizing.
