  • 2 cups Brussels sprouts, halved
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the sliced carrots, diced potatoes, and halved Brussels sprouts in a large mixing bowl.
  3. Whisk together the heavy cream, vegetable broth, garlic powder, onion powder, salt, and pepper in a separate bowl.
  4. Pour the cream mixture over the prepared vegetables and stir gently to coat them evenly.
  5. Transfer the vegetable mixture to a greased baking dish, spreading it out evenly.
  6. Mix the breadcrumbs with the melted butter in a small bowl and sprinkle it evenly over the vegetable layer.
  7. Bake the casserole in the preheated oven for 30-35 minutes, until the top is golden and crispy.
  8. Serve your warm casserole straight from the oven.

Notes

Feel free to use seasonal vegetables you have on hand. Add grated cheese on top before baking for a cheesier version.
