Creamy Tuscan Salmon

A rich and creamy salmon dish with tomatoes and spinach, reminiscent of coastal Italy.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the salmon fillets with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side until cooked through. Remove salmon and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and add the cherry tomatoes. Cook for 2-3 minutes until the tomatoes soften.
  5. Stir in the spinach and let it wilt, then add the Parmesan cheese and mix well.
  6. Place the salmon back into the skillet, spooning the sauce over it.
  7. Cook for an additional 2 minutes until everything is heated through.
  8. Garnish with fresh basil before serving.

Notes

For a lighter sauce, consider substituting half of the heavy cream with low-fat Greek yogurt. If using frozen spinach, ensure it’s thawed and drained well.
