A warm and comforting soup featuring cheese-filled tortellini in a rich, creamy tomato broth with Italian sausage and fresh spinach.

Ingredients

  • 1 package cheese tortellini
  • 1 pound Italian sausage
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the Italian sausage and cook until browned, breaking it apart with a spatula.
  3. Stir in minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the diced tomatoes and chicken broth, bringing to a simmer.
  5. Add the cheese tortellini and cook according to package instructions until they float to the top.
  6. Mix in the spinach and heavy cream, cooking for an additional 2-3 minutes until the spinach wilts.
  7. Season with salt and pepper to taste and serve hot with grated Parmesan cheese on top.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Dairy-heavy soups may thicken, so thin with broth when reheating.
