Delightful mini cheesecakes featuring a creamy orange filling and a crunchy graham cracker crust, perfect for any occasion.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/4 cup orange juice
  • 1 tsp orange zest
  • 1 cup whipped cream
  • 1 package graham cracker crumbs
  • 3 tbsp butter, melted
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs with melted butter and press the mixture into the bottom of mini cheesecake cups. Bake for 5-7 minutes until lightly golden.
  3. In a large bowl, beat the cream cheese and sugar until smooth and creamy, making sure there are no lumps.
  4. Add in sour cream, vanilla extract, orange juice, and orange zest; mix until combined.
  5. Gently fold in the whipped cream until just combined.
  6. Pour the cheesecake filling over the crusts in the mini cups, filling them up generously.
  7. Bake for 15-20 minutes, or until set but still a bit wobbly in the center.
  8. Let cool and refrigerate for at least 2 hours before serving.

Notes

Serve with additional whipped cream and orange zest on top for a finishing touch. Store leftovers in an airtight container for up to 3 days.
