A creamy pasta dish with tender chicken, juicy mushrooms, and crisp asparagus that comes together in just 30 minutes.

  • 8 oz penne pasta
  • 2 chicken breasts, diced
  • 1 cup asparagus, chopped
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Cook the penne pasta according to the package instructions until al dente; drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute.
  3. Add the diced chicken to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  4. Toss in the sliced mushrooms and chopped asparagus; continue to cook for another 5-7 minutes until the veggies are tender.
  5. Pour in the heavy cream, stirring to combine, and season with salt and pepper.
  6. Add the cooked penne to the skillet, gently mixing until everything is coated in the sauce.
  7. Serve warm and top each plate with freshly grated Parmesan cheese.

Notes

Use pre-cooked chicken to save time. Don’t overcook the asparagus for the best texture.
