Delightful mini cheesecakes with a creamy filling and zesty orange flavor, perfect for any occasion.

Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1/2 cup orange juice
  • 1 tbsp orange zest
  • 1/2 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 1 tbsp powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) to prepare for baking.
  2. Mix graham cracker crumbs and melted butter until well combined. Press this mixture firmly into the bottom of mini cheesecake cups.
  3. Beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add the heavy cream, orange juice, and orange zest to the mixture, blending well.
  5. Pour the cheesecake filling over the crusts in the mini cups.
  6. Transfer the filled cups into the oven and bake for 15-20 minutes, or until set.
  7. Allow your mini cheesecakes to cool at room temperature, then transfer to the refrigerator and chill for at least 2 hours.
  8. Serve garnished with powdered sugar and extra orange zest if desired.

Notes

Ensure cream cheese is softened for easier blending. Press the graham cracker mixture firmly for a sturdy crust.
