  • 1 lb sirloin steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 oz shell pasta
  • 4 cups water
  • 1 teaspoon salt
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg

Instructions

  1. Boil the Pasta: In a large pot, bring 4 cups of water to a vigorous boil. Add 1 teaspoon of salt and then toss in the shell pasta. Cook according to package instructions for about 8-10 minutes, until al dente. Drain and set aside, keeping warm.
  2. Sear the Steak Bites: While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the steak cubes with garlic powder, salt, and pepper. Once the oil is shimmering, add the seasoned steak bites to the skillet, searing for 3-4 minutes until browned. Remove the steak from the skillet.
  3. Create the Garlic Butter Base: In the same skillet, reduce heat to medium and melt 1/2 cup of unsalted butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Simmer the Sauce: Pour in 1 cup of heavy cream, stirring until it comes to a gentle simmer. Stir in 1 cup of Parmesan and 1/4 teaspoon of nutmeg until the cheese melts into a smooth sauce.
  5. Combine the Stars of the Dish: Add the cooked pasta and seared steak bites to the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
  6. Serve and Garnish: Serve immediately with extra grated Parmesan at the table.

Notes
