  • 1 pound chicken breast, diced
  • 4 slices bacon, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach (optional)
  • 1 teaspoon garlic powder
  • To taste salt and pepper
  • To serve grated Parmesan cheese

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy, then remove and drain on paper towels.
  2. Sauté the diced chicken breast in the same skillet, seasoning with salt, pepper, and garlic powder until browned and cooked through, about 5-7 minutes.
  3. Create the creamy sauce by pouring in the chicken broth and heavy cream, stirring to combine and bringing to a gentle simmer.
  4. Combine the gnocchi with the sauce, stirring gently to coat, adding more chicken broth if the sauce is too thick.
  5. Add the spinach, allowing it to wilt for a minute.
  6. Bring it all together by adding the crispy bacon back into the skillet, mixing to integrate flavors.
  7. Serve hot, topped with grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of chicken broth.
