A warm and comforting dish that combines succulent chicken, fluffy rice, and sweet peas enveloped in a rich, velvety sauce.

Ingredients

  • 1 cup of rice
  • 2 cups of chicken broth
  • 1 lb chicken breasts, diced
  • 1 cup of heavy cream
  • 1 cup of frozen peas and carrots
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add chopped onions and garlic, and sauté until translucent.
  3. Add diced chicken and cook until browned.
  4. Stir in rice and chicken broth, bringing the mixture to a boil.
  5. Reduce heat, cover, and simmer for about 15 minutes, or until rice is cooked.
  6. Stir in heavy cream and frozen peas and carrots.
  7. Season with salt and pepper to taste.
  8. Cook for an additional 5 minutes, stirring occasionally.
  9. Serve hot and enjoy!

Notes

Leftovers keep well in an airtight container for up to 3 days. Add a splash of chicken broth when reheating for a creamy texture.
