A comforting and creamy soup made with fresh broccoli and sharp cheddar cheese, perfect for chilly evenings.

Ingredients

  • 2 cups broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.
  2. Add the Broccoli and Broth: Next, add the broccoli florets and broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer until the broccoli is tender, about 10-15 minutes.
  3. Blend Until Smooth: Use an immersion blender to puree the soup until smooth, or transfer it to a blender in batches.
  4. Stir in the Cream and Cheese: Return the pureed soup to heat, then stir in the heavy cream and shredded cheddar cheese. Cook until the cheese is melted, about 5 minutes.
  5. Season and Serve: Season with salt and pepper to taste. Serve warm.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk. Extra seasonings such as nutmeg or cayenne can add a nice twist.
