A comforting and creamy beef stroganoff made with tender beef, mushrooms, and a rich sauce, served over noodles.

Ingredients

  • 1 lb beef sirloin, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Cooked egg noodles or rice for serving
  • Parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced beef and cook until browned. Remove the beef and set it aside.
  2. Sauté the chopped onions and minced garlic in the same skillet until softened and fragrant.
  3. Cook the sliced mushrooms until they release their moisture and start to caramelize.
  4. Sprinkle flour over the mushroom mixture and stir to combine.
  5. Gradually add the beef broth while stirring constantly until the mixture thickens.
  6. Reduce the heat and stir in the sour cream until well combined and creamy.
  7. Return the cooked beef to the skillet and mix gently until heated through.
  8. Season with salt and pepper to taste.
  9. Serve the stroganoff over cooked egg noodles or rice, garnished with fresh parsley.

Notes

For a lighter version, use lean cuts of beef and reduced-fat sour cream. Add herbs for extra flavor.
